La carne, marinada en chiles y especias, se dora hasta quedar jugosa por dentro y tostada por fuera. En tortilla de ma\u00edz, con cebolla, cilantro y un golpe de pi\u00f1a, el bocado es dulce, ahumado y picante a la vez.<\/p>\n<p>En casa no hace falta el trompo: un sart\u00e9n bien caliente o el horno logran esa orilla chisporroteada. El secreto est\u00e1 en el adobo y en no sobrecocinar. Aqu\u00ed tienes una receta b\u00e1sica para preparar tacos al pastor.<\/p>\n<h2>Ingredientes<\/h2>\n<ul>\n<li>1 kg de pierna de cerdo en rebanadas delgadas<\/li>\n<li>4 chiles guajillo<\/li>\n<li>2 chiles ancho<\/li>\n<li>1\/4 de pi\u00f1a (m\u00e1s rebanadas para servir)<\/li>\n<li>3 dientes de ajo<\/li>\n<li>1\/4 de cebolla<\/li>\n<li>1\/2 taza de vinagre blanco o de pi\u00f1a<\/li>\n<li>1 cucharadita de comino<\/li>\n<li>1 cucharadita de or\u00e9gano seco<\/li>\n<li>1\/2 cucharadita de piment\u00f3n o achiote<\/li>\n<li>Sal y pimienta al gusto<\/li>\n<li>Tortillas de ma\u00edz, cilantro, cebolla picada y lim\u00f3n<\/li>\n<\/ul>\n<h2>Preparaci\u00f3n<\/h2>\n<h3>1. El adobo<\/h3>\n<p>Remoja los chiles sin semillas en agua caliente 15 minutos. Lic\u00faalos con ajo, cebolla, un trozo de pi\u00f1a, vinagre, comino, or\u00e9gano, achiote, sal y pimienta hasta quedar liso.<\/p>\n<h3>2. Marinar<\/h3>\n<p>Cubre la carne con el adobo y deja reposar al menos 2 horas (de un d\u00eda para otro queda mejor).<\/p>\n<h3>3. Cocinar<\/h3>\n<p>En sart\u00e9n o plancha bien caliente, dora las rebanadas por tandas hasta que se marquen. Pica en tiritas. En la misma sart\u00e9n carameliza unas rebanadas de pi\u00f1a.<\/p>\n<h3>4. Armar los tacos<\/h3>\n<p>Calienta las tortillas, rellena con la carne, pi\u00f1a, cebolla y cilantro.
